In the wake of health concerns, environmental sensitives, evolving food cultures, and the occurrence of the natural and organic movement, the future of restaurants is being redefined. A fairly new proposition is emerging between the fast food and casual dining concepts that are taking the best of both worlds and responding to the entire spectrum of new dining needs. With opportunities abounding in this space, chains and start-ups are cleaning up menus, adjusting recipe configurations, enabling personalized everything, and crafting flexible and fast dining experiences in what is now called “fast-casual.” As free time flows out the window and a larger number of people start to step out of their comfort zone, the concept is looking increasingly lucrative.
