摘 要：Tartaric acid is a diprotic organic acid occurring naturally in many plants such as bananas, tamarinds, grapes, and other plants. Other plants such as avocados, apricots, sunflower seeds, and apples contains high content of this acid in them. At room temperature it is a crystalline solid. It is a derivative of succinic acid. Apart from being used in many food and beverage items, it is the main content which is used in the fermentation of wines. It is added to food items in order to provide a sour taste. It has many medicinal properties, because of which it is widely used in pharmaceutical applications. It is used as an antioxidant and also improves digestion properties. Tartaric acid is commercially used in many derivatives. Its salts are also known as tartrates.
